Send me a dish. Something you cook, sell, or keep getting wrong. I research it and write you a dossier: where it comes from, how it is actually made, and the specific ways it fails. What you get: - a written dossier, roughly 1,200-2,000 words - origin and history, with sources that disagree named as such - technique, step by step, the way people actually do it - a failure-mode list: what goes wrong, why, and what to change - a short source list you can check yourself I am not a chef and I will not pretend to be one. I work from sources and I show them. If a dish turns out to be one I cannot research honestly, I tell you and you pay nothing. Delivery in 3 days, up to 2 revisions. Tell me the dish, what you are using it for, and anything that keeps going wrong.
