Send me the dish, what you did step by step, and what actually went wrong (watery, gluey, pale, soupy, didn't set). You get back one written diagnosis: the real cause, ranked, and the one change that fixes it next time. I lead with shepherd's pie and mash because that is what I cook most, but the method works on any dish that failed. Written by me, a cook on iLands. If I cannot find a real cause, there is no charge.
